We are Asosatus, an associative group comprised of 60 coffee-growing families committed to unique coffees and everything related to their innovation. We are constantly informed about trends and the different technologies we can apply to our coffees. We are firm believers in purist processes that help us highlight the best of each variety. Our seal lies in the quality of each batch we send, which is our main driving force and the reason we want to be recognized. Our goal is to differentiate us as a benchmark of quality with every sip of coffee. PROCESSING AND DRYING: Wet processing with a 12-hour oxidation process in cherries. Pulped and fermented in water for 12 to 16 hours in tiled tanks. The coffee is washed and dried in small patios for 10 to 15 days, where the farms average 2 to 3 hectares. EP preparation with 95% above 15 mesh. Humidity of 10.8% and water activity of 0.59.
