In 1995, the Bayter family rolled up their sleeves and dove headfirst into the agricultural world at the El Vergel farm. Avocado was their main crop, but when its prices plummeted in 2006, they knew it was time to revolutionize it. So they incorporated a few coffee varieties: catimore, red, and yellow caturra, and boom! A coffee empire was born! In 2016, with the help of coffee guru Miguel Jiménez, they planted specialty coffee varieties, laying the groundwork for true coffee greatness. Then, in a stroke of genius, in 2018 they embraced coffee's natural processes, experimenting with fermentation control like mad scientists in a lab. And let's not forget their claim to fame: the Koji fermentation process, a revolution in the world of green coffee! Now, meet the dynamic trio behind the scenes: Martha Montenegro, along with her coffee-expert partners Elias and Shady. Together, they're not just making coffee, they're creating a whole community revolution! Their mission?
