Edvin Emanuel Sabillón Sabillón manages Finca El Pibe in La Paña, Santa Bárbara, Honduras, at 1,400 meters above sea level (14°57'27.25"N, 88°4'43.24"W). Coming from a family of coffee farmers, Edvin inherited a plot of land from his father in 2009. While working at a bank and attending university, he began growing specialty coffee in 2018, motivated by his neighbors who had been successful in producing high-quality beans.
Currently, Finca El Pibe covers 1.4 hectares with a modest expected production of five quintals, with one permanent worker and up to eight harvesters. The main variety is Parainema, grown under regulated shade. Edvin does not apply organic fertilizer, but rather a region-specific formula of nitrogen, phosphorus, and potassium. He plans to initiate a pruning program to improve productivity. His post-harvest method consists of fermenting the cherries for 48 hours in plastic bags, followed by pulping, a 24-hour dry fermentation, and finally, drying in a solar tunnel for approximately 20 days. Wastewater consumption is minimal, given that most of his production is produced using a honey process. Other crops include radishes and cilantro, and Edvin has not observed significant pest or disease problems. He also reports limited effects of climate change in his region.
